PinExt Gluten Free Sausage Pizza Pie

If you like sausage and pies. If you’re looking for a quite easy and quick to make recipe that you can actually eat for breakfast, lunch or dinner! (wow!). And if you want it to be gluten free and full of healthy ingredients. Then this is it!

Putting a few different recipes together and then adding my own spin on it, I came up with this one below that I hope you’ll enjoy as much as I do!

I chose to use gluten free, sprouted, organic flours, which I really think most people should switch to these days. There is strong clinical and scientific evidence that regular gluten grains are so harmful for our health. They damage our gastrointestinal system, are hard to digest, generate allergies and food reactivities, celiac disease and gluten intolerances. Most processed grains are rancid, nutritionally deficient and devitalized. The taste of these grains and flours is far away from what real bakes goods with real, sprouted flours should taste like.

Sprouting, soaking and genuine sourdough leavening “pre-digests” grains, allowing the nutrients to be more easily assimilated and metabolized. This is an age-old approach practiced in most traditional cultures. Sprouting begins germination, which increases the enzymatic activity in foods and inactivates substances called enzyme inhibitors.

Sprouted flours and grains have increased vitamins C, B, carotene (up to 8 times!!), and allow absorption of minerals like calcium, magneisum, uron, copper and zinc that are drastically reduced when you consume processed, regular grains.

Let’s go back to the recipe now! Here it goes:

Ingredients:

CRUST

1 1/2 cups of organic sprouted flour (mix of buckwheat, amaranth and brown rice flour, or choose your favorite one)

2 pastured organic eggs

1/2 cup shredded raw organic cheddar cheese

3-4 Tbsp organic extra virgin coconut oil or butter

Spices: salt, pepper, coriander, basil, thyme or your favorite ones for pizza

TOPPING

cut up pieces of fresh organic sausage or pastured / organic ground pork, or your choice of meat*

1 cup shredded raw organic cheddar cheese

1 pastured organic egg

red, yellow, orange or green organic bell peppers

onion

organic tomato

mushrooms

organic spinach

Spices: basil, marjoram, thyme, pepper

 

Step 1: mix the ingredients for crust and form a dough. Evenly spread on a chlorine free baking paper on a baking tray. It shouldn’t be too thin or too thick. Think about your favorite pizza crust.

Step 2:  evenly spread the shredded cheese over the dough and then the sausage and cut up vegetables. Lightly beat the egg with spices and pour over the pie.

Step 3: Bake at 340 F for approx. 30-40 min or when the whole pie is set.

You can freeze leftovers and pull out and warm up in the oven on mornings when you’re in a rush.

*Note: I made the pie first with ground antelope which rendered it a little crumbly and dry so I suggest using sausage or a fattier type of ground meat that can hold together
